My sister called me to ask if I had a picture in Carolina Bride a few nights ago. I told her that I didn’t. She said that after someone saw Lisa’s bridal portrait hanging on the wall at the studio, she said she had seen the same image in the magazine. I didn’t believe it! Chad and I were having dinner at PF Changs that night (I love that place!). We stopped by Barnes and Noble on the way home to take a peek at the magazine. I was so excited to see Lisa’s picture featured in their wedding album section. They usually reserve this space and the cover for advertisers that spend thousands of dollars with them. =)
You know it has to be good if it requires a block of cream cheese!! Yummy!
I used to measure out the ingredients, but then I found that it was
easier to just put the softened cream cheese in a bowl…and fill it up with below
fillings until it was a good chunky consistency. It sounds like a crazy mix, but trust
me it is delicious and oh so easy once you get the hang of it!
1 box cream cheese
1 cup raisins
small can black olives, sliced
1/2 cup green olives, sliced
1 small orange bell pepper, diced
dash of cayenne red pepper
2 cups shredded jack/cheddar cheese (1 bag)
Roll up mixture in tortilla shells and bake on 350 for 30 minutes.
Make a homemade sauce to pour under and over the shells or buy a premade sauce. 1 Sauce
recipe:
5 small tomatoes
minced garlic
1 red bell pepper
salt
Put in blender until smooth or chunky (preference) then bring to a boil and then simmer
on stove for 15 minutes. Pour under and over enchiladas before baking. Chad cuts up
the bell pepper for the enchiladas and makes the sauce while I make the enchiladas so
we can do it pretty quickly when we work together.
It’s a big hit with our neighbors. I’ve tried out a lot of new recipes on them, not all were
a hit!!! The last thing I tried was a hazelnut-butternut squash lasagne. Whatever you do,
avoid that one. =)
I hope everyone had a great Christmas! We spent Christmas with Chad’s family in Pennsylvania this year. Chad thought it would be cool to expose Jillian to skiing so we stayed a couple of nights at a ski resort near Pittsburgh. We were bummed out the first day because it was so drizzly and gray.
We enrolled Jillian in ski school, but we picked her up early so she wouldn’t have to spend the day in the rain. Their photographer captured the cutest picture of her! I had to order prints for Christmas presents. She refuses to smile for me but I did get a few candids of her when she was snowtubing. She couldn’t get enough of the snow!
Chad has been snowboarding since he was a teenager, so he convinced me to take a snowboarding class. They put me in the 8-12 year-old class. I took out an 8 y/o on my first run. I felt terrible about it, but luckily he wasn’t hurt! =)
